Yumminess

I made brownies for a friends birthday. Well, if I was totally honest, I made them for her, and for me too. I love these brownies. They are a little bit of work in that you are making TWO frostings, but ohmygosh they are so yum-O.

Grasshopper Brownies

3 cups sugar
¾ cup unsweetened cocoa
1 ½ cups melted butter
6 eggs
2 ¼ cup flour
2 teaspoons vanilla
¾ teaspoons salt

Mint Frosting
1 pound powdered sugar
½ teaspoon peppermint oil
Green food coloring
½ cup butter, softened
2 tablespoons light karo syrup
1 teaspoons vanilla
Dash salt

Chocolate Frosting
1 pound powdered sugar
2/3 cup unsweetened cocoa
¼ teaspoon salt
¼ teaspoon vanilla
7 tablespoons butter, softened 1/3 cup boiling water

Combine all brownie ingredients in bosch with cookie paddles. Mix only until creamy (be careful not to over mix). Prepare a large cookie sheet with parchment liner ( I just grease my pan) . Pour in mixture. Bake 350ยบ for 22-25 minutes or until toothpick comes out clean. Cool completely. Frostings: Combine and mix thoroughly the ingredients for each frosting (may need to add extra liquid for creamier texture). Frost brownies first with mint frosting. Put into refrigerator for 10 minutes. Frost with chocolate frosting. Cut into squares and enjoy!

Funny, the other day our mint oil fell out of the cupboard and the lid broke and I thought, "Should I throw this away? I haven't used this in years." But I kept it and now I know what to do with it! Thanks for the recipe this looks so yummy!
