Blondies

Now, this recipe goes against my if-it-aint-chocolate-I'm-not-interested belief system. However, the brown sugar/butter goodness is the bomb-diggity, yeah, that's right, I used a 90's urban saying, THAT GOOD!

This recipe is from Allison T. The actual recipe calls for chocolate chips or chunks, but all I had was butterscotch chips that day and it was a very happy acccident.

Cocolut Chocolate Chunk Blondies
1 c flour
1/8 t salt
1 cube melted butter
1 c light brown sugar
1 egg
1 1/2 t vanilla
1 c coconut
1 c chocolate or butterscotch chips
more coconut to sprinkle on top of batter

Preheat oven to 350 and spray an 8x8 square dish. Combine the flour and salt, set aside. Stir together melted butter and brown sugar until creamy, then beat in egg and vanilla. Slowly beat in flour and salt, then the coconut and chips. Scrape the batter into a pan, and smooth evenly with a butter knife or small spatula. Sprinkle extra coconut on top and bake for 25-30 min.
